It’s
fermented with a mix of house yeasts from both breweries, which
apparently loved to work together as much as we did! It’s a traditional
Saison as those from 1900, with 14 months barrel-ageing.
5,9% abv, blond almost amber, its bouquet has a well-pronounced ‘rustic’ character, somewhere between a lambic and a farm cider, with nice woody and apple flavours. The taste is a mix of rhubarb, quince, and rye accents, with a light touch of citrus fruit, wood, and warm spices. Its final is mineral and slightly sour. At once surprisingly complex and very refreshing, like the Saisons of the old days.
