Polly's (UK) - Humble Clairvoyance // Preliminary Flex // The Daphne Touch


 Humble Clairvoyance / DIPA / 8.5% - We've got a lot of hops sat in our cold store currently, and we're getting very bored not getting to use them all. We decided to go bigger than any other beer we've brewed this year with Humble Clairvoyance. Rocking in at a mighty 8.5% but drinking like a beer half its weight, this beer is about one thing and one thing only - straight up juice. With all these hops sitting in our cold store, we made a point of loading as many as we physically could into this beer, with nearly 50kg of Galaxy, Enigma, Citra and Mosaic loaded into the dry-hop. Expect a metric tonne of pineapple, mango, papaya, and clementine notes backed up with massive silky mouthfeel; a gleaming example of how far our brewing techniques have come along in our short two year existence.

 
Preliminary Flex / Pale / 5.1% - Prior to lockdown, we had our eye on April for launching a core range (yep, you heard right, a CORE range) of beers that we’d be able to come back to again and again. COVID-19 duly put a dampner on those plans, but it didn’t dissuade us from smacking a new label on our core pale ale trial. Preliminary Flex is our first dip into a beer simple enough to brew again and again, but complex enough to keep people coming back again and again. Setting ourselves a very high bar against Steady Rolling Man, which we consider the best pale ale in the country; our effort is a simple but effective hop bill of Citra and Simcoe, with just a little bit of Cascade in the whirlpool, clean fermented with US05 yeast. The result? Probably our best and most drinkable pale ale to date.

The Daphne Touch / IPA / 6.5% - We’ve been in lockdown for exactly a month now, and as a result, we’re getting a little bored, and shall we say, experimental. The Daphne Touch was born from an idea birthed when we wanted to brew the fruitiest, thickest, pulpiest beer we possibly could. Step forward Kveik yeast. The Scandinavian super-yeast is a brewer’s dream – quick to ferment, active at practically any temperature, and oh so many incredible flavours. Rolling with a whole host of pineapple, yuzu, and pair notes from the off, we dry hopped this beer with a megastar hop bill of Citra, Simcoe, Mosaic and Azacca for a full on fruit salad of tropical notes. Finished off with a generous lashing of lactose to thicken it up just a little more, we’ll be the first to say we succeeded in our mission.
